For hundreds of years oatmeal was a staple in the highlander’s diet. It was eaten as gruel (oatmeal), mixed into a sausage, or cooked into oatcakes. I’ve made these with my children. They’re simple, and make a healthy alternative to sugary snacks.
Here’s a quick recipe. You can use raw sugar, brown sugar, or honey. Play around with the amount and type of sugar until you find the right combination for your family.
2 cups rolled oats
1 tsp salt
¼ cup raw sugar
½ tsp baking soda
Water until you reach a consistency that can be rolled
Cut into circles with a cookie cutter or a glass. Or you can roll it onto a cookie sheet and cut into squares.
Bake at 350 on a greased cookie sheet for 15 minutes.
